Brown Butter Chocolate Chip Cookies

Chewy, crisp-edged cookies with deep toffee flavor from browned butter and puddles of melted dark chocolate.

Ingredients

Cookies

  • 1 cup dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 tsp flaky sea salt

Brown butter

  • 2 sticks unsalted butter, cut into pieces

Dry mix

  • 2 1/4 cups all-purpose flour, spooned and leveled
  • 1 tsp baking soda
  • 1 tsp kosher salt, Diamond Crystal

Chocolate

  • 10 oz dark chocolate, 60 to 70% cacao

Steps

  1. 0:00 Brown Melt 2 sticks unsalted butter in a light-colored saucepan over medium heat, then keep swirling until it foams and the solids on the bottom turn deep golden and smell nutty. (7 min)
